Directions
1. Mix the dry ingredients with the Mac & Cheese mix.

2. Heat the balsamic vinegar and chicken broth to boiling and then add to the dry ingredients.

3. Mix well and allow to hydrate for about 12 minutes.

4. Fold the fillo either in half or in thirds (three layers thick is less prone to tearing).

5. Arrange the pasta mixture along one edge leaving about 2 inches clear at the top and bottom. Fold the ends over.

6. Give it a light spray with butter-flavor cooking spray and roll it up. Place seam-side down on a baking tray lined with parchment paper. Spray lightly.

7. Use a serrated knife to cut a slit across the pocket.

8. Bake at 375 degrees for about 20 minutes until golden.

Vary the ingredients to suit your taste: add red pepper flakes or a little hot sauce, add basil or Italian seasoning, etc. Note: If you're using fresh cheese rather than powder be sure to reduce the amount of liquid so the fillo doesn't get soggy.
