Combine fresh vegetables and a few easy ingredients for a tasty twist on your Nutrisystem Mushroom Risotto entree.

Directions
1. Spray skillet with cooking spray and sauté onion and garlic.

2. Once the onion and garlic are cooked, add the mushroom risotto and stir.

3. Pour in water and chicken boulllion. Let simmer unti thickened.

4. Core the tomato, remove seeds, and drain the juice.

5. Cut up the tomato, arrange it on your plate, and add a dash of salt and pepper.

6. Once the risotto mixture has thickened, pour it over the tomato.

7. Top with shredded parmesan cheese.
