Trick your taste buds into thinking you're feasting on an old Italian favorite with zesty spaghetti squash topped with fresh marinara sauce.

Directions
To prepare the marinara sauce:

1. Dice onion and carrots.

2. Spray the pan with canola cooking spray and sauté onion and carrot for 3 to 5 minutes.

3. Add minced garlic and Italian seasoning blend and cook for another minute or until you can smell the garlic.

4. Add canned tomatoes, reduce heat, cover and simmer for a minimum of 20 minutes.

To prepare the spaghetti squash:

1. Pierce the squash with a knife 8 to 10 times

2. Microwave for 5 minutes.

3. Turn the squash over and microwave for another 7 to 10 minutes or until soft.

4. Cut squash in half, scoop out the seeds, and use a fork to remove the "spaghetti" from inside the squash. Discard outer portion.

5. Serve spaghetti squash topped with marinara sauce. Sprinkle with grated parmesan cheese if desired.
