Shrimp with Sweet Pineapple Rice

Shrimp are a great source of lean protein and pair well with sweet pineapple. Basmati rice, long-grain rice known for its fragrance, is typically grown in India but can be found with other rice or in the ethnic food aisle of your local grocery store.

Directions
1. In a medium pot, heat oil over medium to high heat.

2. Once oil is heated, reduce heat to low and sauté the peppers and onions for about 5 minutes, stirring occasionally.

3. While vegetables are sautéing, rinse the basmati rice in a strainer until water runs clear, about 2 minutes.

4. Add the rice to the pot with the vegetables, stirring to coat the rice with oil. This will help prevent the rice from sticking to the pot.

5. Add the chicken broth, pineapple, and soy sauce to the pot.

6. Bring rice to a boil, then reduce to a slow simmer and cover saucepan with a lid. Let simmer for about 15 to 20 minutes or until rice is soft.

7. Turn off heat and add the cooked shrimp to pot to reheat, for about 5 minutes. Fluff rice with a spoon or fork and serve.

Yields 4 servings.
