Crepes may seem complicated, but this easy recipe will have you impressing family and friends. Fill crepes with good-for-you fillings like fruits and PowerFuels such as yogurt, soft cheeses, or nut butters—the possibilities are endless!

Directions
1. In a large bowl, whisk together eggs and flour. Gradually add in milk and vanilla, stirring to combine.

2. Lightly coat a 6- to 7-inch nonstick pan with cooking spray and place over medium heat.

3. Using a measuring cup, pour a thin layer of batter into the pan (about 3 tablespoons of batter per crepe). Tilt the pan until the batter coats the bottom surface evenly.

4. Cook the crepe for about 30 seconds, until the bottom is lightly browned. Using a rubber spatula, flip crepe and cook for another 30 seconds.

5. Repeat until you have used all of the remaining

batter. Recipe yields about 12 crepes.

6. Fill each crepe with 1 tablespoon of yogurt and 2 tablespoons of strawberries. Roll and enjoy.

Yields 6 servings.
