Directions
1. Roll up several leaves of kale and cut into narrow strips. Cut the strips in half if they are too long. Add the cut kale into a large serving bowl.

2. Drizzle the olive oil and lemon juice over the kale and add a pinch of sea salt.

3. Massage the mixture with your hands until the kale becomes soft or wilts a little bit. (It will be a beautiful shade of green!)

4. Add the red bell peppers, green onion, dried cranberries and walnuts. Mix thoroughly and serve cold.

Notes: This is the best salad ever! It sounds strange but once you try it you'll be hooked. You can decrease the amount of nuts and dried cranberries if desired. Mandarin oranges would work in this too! Experiment! It's just a really neat salad.
