This is a flavorful recipe that adds a nice big portion of unlimited veggies to your menu for the day!

Directions
1. Spray a nonstick pan with cooking spray and heat over medium heat.

2. Add the onion and garlic and saute until just tender.

3. Add the zucchini and yellow squash and saute until they are just starting to brown.

4. Add the diced tomatoes (one can of organic, no-salt-added diced tomatoes can be substituted) and stir.

5. Season with Italian herbs (basil, oregano, thyme or rosemary) to taste.

6. Cover and reduce the heat to simmer for about 5 minutes or until the vegetables are tender.
