Cranberry Couscous Chicken

We substituted a delightful change-of-pace couscous for the small dinner roll that generally accompanies the Nutrisystem Grilled Chicken Breast. Although this is perfect any time of year, this hearty, satisfying dinner entrée is especially good when the air is crisp and cold. Feel free to substitute dried apricots or dried cherries for the cranberries. To make the dish even richer, prepare the couscous with low-sodium chicken broth instead of the water called for in the package directions.

1.Place cranberries in 3 tbsp. of hot water for 5 minutes, allowing fruit to plump.
2.Prepare couscous per package directions.

3. Remove from stovetop and while hot, add sautéed onion, plumped cranberries, and toasted almonds. Stir to blend.

4. Add tomatoes.

5. Spoon mixture on to a dinner plate and cover to keep warm.

6. Prepare Nutrisystem® Grilled Chicken Breast per package directions.

7. Open package, removing chicken and reserving liquid in bag.

8. Place chicken over hot couscous and pour chicken juice from package over couscous.

9. Serve immediately, topping with basil, if desired.
