This Ginger Apple and Sweet Potato Salad is an easy, gourmet recipe and would make a great addition to any outdoor event. The flavors of this salad are exploding with sweetness and starchiness from the sweet potatoes and apples, citrus, mint and autumn spices such as cinnamon, ginger, and nutmeg. This recipe serves two, but feel free to double or triple it to serve at any event.

Directions
1. Pre-heat oven to 375F.
2. Place the diced sweet potatoes on a greased sheet pan sprayed with pan spray.
3. Season the sweet potatoes with cinnamon and nutmeg and roast for around 30 minutes, until tender or until a knife can easily pierce through the potatoes.
4. Cool down the sweet potatoes in a refrigerator.
5. Mix in a small bowl, the mayonnaise, orange juice, orange zest, honey, ginger and chopped mint.
6. After the sweet potatoes are cooled down, mix in a medium-size bowl, the sweet potatoes, diced apples and diced onions. Mix in the mayonnaise mixture and refrigerate until desired.
Variations and Serving Suggestions:
Almost any type of sweet red or green apple will work for this recipe. This recipe can hold, covered in a refrigerator, for 3-4 days. Top the recipe with a small amount of orange zest for a garnish. Yield: 2 servings
